In 2018, Lost Woods Whiskey was founded in Minnesota by local outdoorsman, Tom Schaeppi. The brand was based on Tom’s passion for bringing people together in the great outdoors to spark conversation and protection of the environment.

WHAT IS AMERICAN SINGLE MALT WHISKEY?

American single malt whiskey is defined as a whiskey produced in a single U.S distillery with a mash consisting of 100% malted barley. While crafting, the whiskey must be stored in smaller batch oak barrels with a finished distillation proof of 160 and bottled with at least an 80 proof finished product.

80 proof

Lost Woods is excited to announce that they have finished production for a cocktailing 80-proof whiskey!

The team has been hard at work perfecting the recipe for their third whiskey option that is now available.

88 proof

Our original, 88-proof whiskey helped to put Lost Woods on the map when it won accolades year over year at the prestigious San Francisco World Spirits Competition (SFWSC).

After winning a Double Gold award three years in a row, our 88-proof whiskey received the very first Platinum award in the American Single Malt Whiskey category in 2023 at SFWSC. This makes Lost Woods 88-proof whiskey the first Platinum recipient in any category for spirits produced in Minnesota.

110 proof

Later in Winter of 2024, Lost Woods released a limited run of our 110 Cask Strength Whiskey in select Minnesota locations.

Taking after our original 88, the 110-cask strength whiskey is also known for it’s commitment to taste and was a recipient of a double gold medal in the 2024 San Francisco World Spirits Competition.

the process

The first markers of quality show at grain selection, which is why we only use quality, locally grown barley for our whiskey.

SO MUCH DEPENDS ON THE GRAIN.

Once harvested, the barley is ground into a fine meal, mixed with water, and cooked until the starches convert into sugars. Next, yeast is added, which converts the sugars into alcohol.

KEEP IT HOT

What’s left is a fermentation mash, also known as beer. The mixture is pumped into a still and heated, where evaporation and steam condensation allows the alcohol to separate from the water and grain byproducts.

GIVE IT TIME

Now it’s time to age our whiskey. Using new techniques that significantly cuts down the amount of American White Oak needed, our whiskey ages through a process that allows us to get more out of the wood for less- a solution that is both eco-friendly and time effective!

SIP AWAY!

Barrel maturation weaves in the oak and sherry flavors, resulting in a refined, cask strength goodness that’s caramelly in color.

Once the whiskey is properly aged, it’s ready to be bottled.
